Quick guilt-free chocolate pudding full of healthy ingredients that's easy to make!
2 Avocados
(yes avos, no one will know!)
1/4 cup honey or rice malt syrup
(low fructose alternative)
1 cup frozen berries of your choice
(i've made it with raspberries as well as a strawberry version, both taste great; the flavour comes through a bit so switch it up each time you make it! I can't wait to try it with blackberries or even rhubarb!)
1.5 tsp lemon juice
(juice from half a lemon)
6 tbsp raw cocoa powder
2 tsp vanilla extract

1. Place berries into a food processor (or blender) and add 5-10 tbsp water. Set on high for several minutes, stopping to scrape down sides. Add additional water if not blending to a smooth sorbet-like consistency.

2. Add rest of ingredients to blender and set on high for a few minutes, stopping to scrape down sides.

3. Garnish with additional berries (optional) and serve immediately. Serves 4 but definitely double the recipe because people will want seconds!
