indian masala cashew pizza with raita

For those of you in North America who haven't been introduced to MKR (My Kitchen Rules), it's an Aussie reality TV cooking show. I'm not into reality TV, but something about pairs of amateur cooks making amazing food gets you excited about cooking something new! After raving about a couple MKR alum cookbooks to my family, my sister tracked down MKR New Zealand online, which is where she discovered this gem...

Like all the recipes on this site, i've altered them to reduce processed/canned items as well as sugar...this is the original recipe.

Masala pizza sauce 2.5 cups diced tomatoes (ideally pre-grilled on the bbq to give them a smoky flavour) 2 tbsp tomato paste 1 tbsp natural sugar alternative (optional- i make this without any sweetener at all) Salt – to taste 1 tsp cumin seeds – toasted and ground (or ground cumin*) Worcestershire sauce to taste

Raita 1 cup yoghurt 1/2 lemon, zested 15 leaves fresh Oregano, roughly chopped

(you can use dried but the texture is a little off-putting and the flavor is not as fresh) 2 tbsp olive oil 1 tsp natural sugar alternative (optional- again, i feel it can do without) Salt – to taste 1/4 cup capers (optional but delicious)

Toppings 200g smoked cheddar cheese, grated 1 cup cashews, roasted and salted

4 green chillies, sliced

1. To make the masala sauce, toast the cumin seeds and grind them roughly. *Alternatively, you can put ground cumin in the heated saucepan prior to adding the rest of the ingredients so it becomes aromatic. Add all other ingredients to a saucepan along with the cumin seeds, mash the tomatoes slightly as they soften (if not grilled), and reduce till you are happy with the flavour.

2. Mix all the ingredients together in a bowl for the raita, keep chilled.

3. Roast cashews (approximately 10 minutes at 180C) and season with salt. Grate smoked cheese. Slice the green chillies.

4. Assemble your pizza by swirling on your masala pizza sauce; add grated smoked cheese and a few sliced green chillies. Bake on pizza stone on barbeque for 10 minutes or on lined baking tray in preheated oven at high temp (220C) for 10 minutes. When pizza is ready, add cashews, more green chilli and dollop with raita.

Enjoy :)
